 . . . and speaking of Jambalaya, Guess what's on the menu tonight? You guessed it! I LOVE Cajun food! It's the one thing that brings me comfort when I get a little homesick! So, here is a little recipe for you. You can TOTALLY make this!!!





This is what you need: Celery, Onion, Bell Peppers,  Garlic, Smoked Sausage, Butter, Rice, Tony's (Optional), Bay leaves, Tomatoes (not shown), shrimp, and a glass of wine! (for yourself, of course! ;) )



Add about 2 Tablespoons of butter to a hot pan (high heat)





Add Sausage to butter and cook on high until it looks like. . . .

Add Celery, Onion, Bell Pepper and Garlic and cook until veggies become soft!


This is what it will look like. . . .


Next, Add tomatoes, and bay leaves and other seasonings of your choice! ( The only seasoning I added was the bay leaves and the Tony's. Hot sauce comes after cooking!) Make sure you cook tomatoes down very well with very little juice left. We don't want the rice to be mushy!
Enjoy wine, while waiting for tomatoes. . . .




Patiently waiting for me to drop something on the floor. . . .

Add Rice (1 1/2 cups) and cook for a couple of mins, stirring  constantly!


Add the liquids! (1 1/3 cups of chicken broth and 1 1/2 cups of water, or you can do all water)You need at least 3 cups of liquids to cook the rice.  Bring to a boil, add shrimp, then cover, reduce heat, and cook for 15 -20 mins. make sure to check on the rice. Cook just until all the liquids are absorbed and rice is done. Cooking it too long will make it mushy. . .yuck.

The finished product! Garnish with green onions and hot sauce! I prefer Tabasco!
