Game Day Snack. . . .or meal. . .whatever. . .: Chili! Based off of Emeril Lagasse's Veggi Chili

I have never been a huge fan of chili. When I was a kid, it was always LOADED with meat and beans. I decided to try out a different kind of chili recipe, where meat is optional! I came across this recipe, by Emeril Lagasse, called, "South of the Border Veggie Chili with Fixins".   WINNER! Even without the meat, this Chili is very hearty, and packed with flavor! I did a few things different with this recipe, but I always pull it out as a guide. Here's my version, which may be a little faster, but just as tasty!

 
 
 
What you'll need
  • Bell peppers
  • Jalapeno
  • Squash
  • Onion
  • Garlic
  • cilantro
  • Kidney beans
  • Diced tomatoes
  • 6 cups of Chicken or vegetable broth 
  • Chili pepper
  • cumin
  • oregano
  • pepper
  • salt
  • Corn Meal
  • Olive oil




    
    Start by caramelizing onions, bell peppers, garlic and jalapeno, in olive oil.


Add, squash (I don't broil the squash, this is optional and it taste great, but I like one pot chili. lol) and allow it to cook down, Once it cooks down, add cilantro stems, seasonings, and cook for 2 minutes. Then add diced tomatoes and stock, and bring to a boil. Once it boils, cover and reduce heat. Add beans. Allow to simmer for 20-30 minutes (the longer, the better!) When chili is almost done, add the corn meal.

 

 
NOW FOR THE FIXINS'!
 
For the Tortilla strips, take a small stack of corn tortillas, and cut into strips. Heat a skillet with oil and pan fry until golden brown!
